If you want to make a vegetarian gravy for vegetarian poutine for friends, is this a good recipe?

2 tablespoons olive oil
2 teaspoons crushed garlic
3 tablespoons white flour
1/3 cup white wine
salt, pepper
1 cup of vegetable broth made from powder and water

Cook garlic in olive oil over high heat. Add flour after allowing to brown into a roux. Make a roux, nice and smooth. Add wine and a little vinegar. Cook over medium heat. Add salt and pepper. Pour vegetable broth in and whisk till smooth. Pour over fries and top with Swiss cheese and cheddar cheese curds, then bake for ten to fifteen minutes at 375 degrees F.

Try adding marmite (yeast extract) to your gravy recipe it will really make a difference

How do I get my frying oil to 350?

I want my oil to get to 350. I don't have a thermometer. What setting should I use on my electric stove-top? (medium, medium high) For how long at that heat setting should the oil preheat in order to reach 350?

Please...only answers from people who know. I am going to be eating what I'm cooking after all. :)
Using a large cast-iron pan to fry chicken. Using about 2 inches of oil.

Medium. Give it four minutes / or when the oil is bubbling. That should be right. You really should invest in a thermometer. They are not expensive. And you must have a REALLY old electric stove. Most now have a heat guage on the dials,...since about 1965-70. (?)
