How can I glaze walnuts crisp & sweet in a wok without burning them?


I've followed a recipe that called for heating walnuts in a pool of oil, but they came out burnt 2/3 of the time. The third time simply didn't change much of the walnut. I thought of turning the walnuts over in melted sugar, but it seemed that the bitterness of the walnuts seeped into the sugar liquid and turned the whole bit bitter; not to mention the melted sugar (turned bitter) stuck to my wok. I hope to accomplish this walnut glaze at home.

You need to get them out before they're completely cooked.

The oil inside the walnuts will continue to cook after you have drain them out of the cooking oil. If you take them out when it's 100% cook. It will be overcooked as it cools.

I do tests when I fry nuts. Use medium heat, put a few in there and take them out in various time to see how long it will take. Keep in mind that putting a lot of them in the oil will lower the heat, and thus takes a little longer than the testing ones.

Cook them and take them out of the wok and put them in a bowl, preferably metal, with the sugar. You don't need to melt the sugar, the heat and moisture from the walnut will melt it nicely. Tossing it around will help evaporate the moisture so it will be crispy. You shouldn't do this in the wok. It's hard to clean and sugar can easily be burnt.

I need a good and easy cookie recipe. Nothing chocolate, something elegant yet simply sweet.?


Hope that makes sense as to what I am looking for.

Elegant PopUp Jam Filled Cookies w/ Glaze Recipe

This is another lovely recipe I found online,and decided to pass along.I hope you enjoy it!

2 cups all-purpose flour
1/8 teaspoon salt
1 1/3 cups cold butter
2/3 cup sour cream
water
2/3 cup apricot fruit spread or raspberry spreadable fruit or peach fruit spread

Topping

1/2 cup powdered sugar
2 tablespoons almond flavored liqueur or orange juice

In large mixing bowl,add the salt& flour,cut in the butter until mixture is crumbly.
Add the sour cream,stirring until dough forms to a ball (few minutes).
Cover,& chill until firm (at least 1 hour).
Heat oven to 400.
Roll dough on a lightly floured surface,using one-third at a time (chill rest of dough) Roll to 1/8-inch thickness and cut with 1 1/2-inch round cookie cutter.
Put half of circles 1 inch apart onto ungreased cookie sheet.
Cut small circle with 3/4-inch round cookie cutter in center of remaining circles.
Brush one side of donut shaped cookies with water.
Put on top of the circles on baking sheet,moist side down.
With rounded 1/4 teaspoonful,add fruit spread to centers of cookies.
Bake 9-11 minutes, or until golden& puffy.
Let cookies cool thoroughly.
Stir thr powdered sugar& liqueur in a small bowl.
Drizzle over cookies.
